改变饮食,拯救地球

1The food we eat every day keeps us alive, but it can alsobring big health and environmental costs. A recent study findsthat small shifts in the food choices could have great benefits toboth health and the planet.

2Because many foods with a high health burden, includ⁃ing processed meats or red meats, have high environmentalcosts, giving up just a few of them can cut a persons food⁃based environmental foot⁃print. Between growing it, packaging it, moving it around, cooking it, and often wasting it,food production makes up about one⁃fifth to one⁃third of all annual greenhouse gas emis⁃sions globally. For an average household, food makes up about as much of the greenhousegas footprint as the electricity.

3To learn how to reduce negative impacts of food production and consumption on theplanet and the body, researchers first assessed damage related to food. Over the past fewdecades, scientists have developed ways of doing“life cycle analyses”for specific itemsand assigned them a hard number to show its environmental impact. Meanwhile, publichealth scientists were doing similar analyses for human bodies. They carefully examined the links between food and health. They concluded that agriculture is a huge piece of the climate puzzle, and agriculture, food, and diet are all linked.

4We cant stop eating, so what should we do? For some climate challenges, there arerelatively straightforward ways. For example, renewable energy sources can already replacemuch of the energy needed to power buildings, cars, and more.

5There’s no substitute for food, but shifting what we eat is possible. If all people on theplanet are vegans, greenhouse gas emissions from the food system could be cut by morethan half; a planet of vegetarians would trim food emissions by 44 percent.

6Food choices are personal, deeply connected to culture, emotion, economic concerns,and so much more. Rather than dictate, it’s much better to try to give choices. This ap?proach aims to inform people so that they can make choices that are linked with theirneeds and values. In general, those choices can benefit both human health and the planet.Remember that we don’t all have to become vegans overnight, but small changes can makea big difference.
